Satay, an Indonesian dish, consists of skewered strips of marinated and grilled meat served with a smooth peanut sauce. Satays are a superb party snack, but make plenty as they disappear quickly!
Soak 25 wooden skewers in water for 30 minutes. Combine all the marinade ingredients, mix thoroughly and set aside.
Cut the chicken into 5 mm (¼ inch) strips and thread them onto the soaked skewers. Place in a shallow dish and thoroughly coat with the marinade. Cover and refrigerate for 2 hours.
