I bake this sponge in a loaf tin and use it in my playful Eggs, Bacon, Toast and Tomato breakfast dessert. It is also great for cupcakes and birthday cakes. The large quantity of butter in the recipe results in a rich sponge bursting with flavour.
I soak the sponge in fragrant Earl Grey tea syrup to add an extra breakfast dimension
