What would a seafood cookbook be without a great fish and chips recipe? At her restaurant bird cow fish, Alex Herbert served a particularly delicious version of this classic. Flathead is the best Australian fish for fish and chips, as it’s so moist and flaky. It’s good to know that even chefs ‘cheat’ by using frozen French fries - they do give the best, most consistent result (Alex uses Edgell straight-cut shoestring fries).
