Double tacos are a novel taco idea I picked up while working at Pasqual’s Cantina, a great little taco shop in Madison, Wisconsin. Just spread a warm flour tortilla with guacamole, put a crunchy taco in the middle of that, fill it with goodness, and then sandwich the two together. You’ll get a kaleidoscope of textures and flavors—chewy flour tortilla, creamy-spicy guacamole, and then crunchiness from the hard-shell taco inside.
I fill the tacos with a protein-rich vegetarian quinoa
