Manuel serves this sauce as an accompaniment for the above tortilla - a combination that may sound odd but, given the Andalucian enthusiasm for high spirits, it is hardly surprising! This sauce also tastes good with meats such as beef.

Ingredients

  • 3 cloves garlic, finely sliced
  • 2 tbsp olive oil
  • 15 g

Method

  1. Sauté the garlic slices in the olive oil until they are tender.
  2. Add the butter, lemon juice, whisky and beef stock. Cook over a low heat, stirring occasionally, for 15 minutes, until reduced.
