I can remember living in Chicago when my mother’s friends gathered in our living room to celebrate the birth of a child. The food for such a party always included boiled red-dyed eggs, a rice wine herbal brew, and pickled trotters and ginger. This dish makes a delightful appetiser. Lovers of trotters will readily appreciate its virtues, and those who try it for the first time will be impressed by how such lowly ingredients become so palatable. It is the ginger that mellows the vinegar. W
