If you like you can add a few spoonfuls of yoghurt to the finished dip to give a lighter, creamier consistency. Cooking the eggplants over an open gas flame, while messy, does give the dip a wonderful smoky flavour.

Ingredients

  • 6 medium purple eggplants (aubergines)
  • 3 garlic cloves, crushed
  • 8 tablespoons

Method

THE EGGPLANTS must be roasted. If you have gas burners you can rest the eggplants on a metal mesh over the flames. If not, roast them in a 200°C (390°F) oven by placing them whole in a roasting pan and baking for about 30 minutes. The eggplants s
