Back in the early 1990s, I got the juiciest, tastiest smoked venison from a local farmer who had a great smoking set-up at his home but, sadly, new regulations put an end to his hobby. Now there are several producers in the Highlands, but Great Glen Charcuterie keeps winning the awards, so I put together this salad to showcase its deliciously lean meat.
