Toasting is the perfect way to handle extra or day-old injera, as it transforms the texture into a chewy delight.

Ingredients

  • 1 tablespoon Ye’qimem Zeyet or extra-virgin olive oil, warmed
  • ½ to 1 teaspoon

Method

Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.

Put the Ye’qimem Zeyet and berbere in a small bowl and stir to combine.

Put the injera bubble-side up on the prepared baking sheet. Make sure it’s not bunched or rolled in
