This is a very popular dish, particularly during Lent. It is a curry enjoyed with injera. The consistency can also lend itself to being eaten as a soup.

  • 1 cup (205 g) split red lentils
  • 1 onion, finely diced

Method

Wash the lentils until the water runs clear. This may take four or five washes. According to my mother, shortcutting this process will give you indigestion and create discomfort in your stomach. It also leaves the lentils with an earthy flavour that you don’t want.
