This rich dish is usually served with a tangy papaya salad to balance the sweetness of the coconut milk and sugar. It is one of those comforting treats that everyone enjoys.


  • 250 ml/8 fl oz/1 cup water

  1. Place the measured water, coconut milk, salt and sugar in a heavy pan. Wash the rice in several changes of cold water until it runs clear.

  2. Add the jasmine rice, cover tightly with a lid and bring to the boil over a medium heat. Reduce the h
