Thailand is one of the world’s major producers of both long grain and glutinous rice. Thai fragrant rice, also known as jasmine rice, is valued the world over for its subtle fragrance. It goes well with both savoury and sweet dishes and is particularly delicious when cooked in coconut milk or served with toasted coconut strips, as in the recipe for Thai Fried Rice. The grains are slightly sticky when cooked, although not so sticky as those ofglutinous rice.
