This dessert just barely earns the title “charlotte,” as the forms aren’t actually lined with persimmon slices. The fruit circles are just a decoration; a true charlotte is always made in a lined form. Slicing the Fuyu persimmons crosswise reveals the decorative spoke pattern produced by the eight soft, flat seeds inside. Although persimmons are most bountiful around Christmas, don’t limit their use to holiday desserts; they can usually be obtained from November through the end of February.
