Mop sauces are often an integral part of the long, slow, smoky, indirect grilling method known as barbecue. You find mop sauces in North Carolina, where they’re brushed on slow-roasting pork shoulders. You find them in Memphis, where they’re used to baste ribs. Mop sauces differ from barbecue sauces in that they’re designed to be used for cooking, not serving (they tend to be thinner and much more potent than barbecue sauces). Unlike barbecue sauces, you wouldn’t want to eat most mop sauces
