This tasty bread, Makki Ki Roti, is the mainstay of cooking in the Punjab and is used as an accompaniment for mopping up the juices at most meals. It is traditionally made using fine cornmeal, which has a distinctive flavour and is widely available from Indian grocers and health-food stores.

  1. Mix the cornmeal, flour and salt together in a large mixing bowl. Gradually add about 250-300ml/8-10fl oz/1-1 ¼ cups warm water to the dry ingredients and blend them together until a moist but firm dough forms.
