The Indian cheese known as paneer in the rest of the country is called sana in north-east India and West Bengal. In this recipe, Sanar Kofta, grated Indian cheese is mixed with mashed potatoes and a few chosen spices, formed into small balls and browned before being simmered in a spicy sauce.

  • 225 g/8 oz/2 cups paneer (Indian cheese), coarsely grated

Method

  1. Mix together the paneer, potatoes, half the ginger, the chilli, garam masala, egg, coriander and half the salt in a bowl.

  2. With dampened hands, make about 16 equal-sized balls from the mixture.
