This rice dish, Khismis Diya Pulao, is cooked in Assamese households on special occasions. It is similar to north Indian pilau rice, but with a different blend of spices and the addition of dried fruit such as raisins or sultanas, which add sweetness. Rice is a part of all meals in Assam.
