Kumol Lusi from Assam are similar to luchi from east India, but they are softer and richer. They are made with plain flour and the dough is enriched with ghee and hot milk, instead of water, creating a velvety soft bread. They are perfect with any vegetable curry and are also popular with egg dishes.

Ingredients

  • 275 g/10 oz/ cups plain (all-purpose) flour, plus a little extra for dusting

Method

  1. Sift the flour into a large bowl and add the salt, sugar and ghee or butter.

  2. Mix the ingredients and gradually add the milk. Mix until a soft dough is formed.
