Sesame seeds grow throughout India and they come in all shades from pale ivory to brown and black. The ivory ones are used to enrich and thicken curries, while the black seeds are used mainly in the north-east to make sweetmeats. If black seeds prove difficult to find, ivory ones can be used in this recipe, Tilor Borfi.
