Sesame seeds grow throughout India and they come in all shades from pale ivory to brown and black. The ivory ones are used to enrich and thicken curries, while the black seeds are used mainly in the north-east to make sweetmeats. If black seeds prove difficult to find, ivory ones can be used in this recipe, Tilor Borfi.
Dry-roast the black sesame seeds and the cardamom pods in a heavy pan over a medium heat, stirring constantly, for 7-8 minutes. Transfer them to a large plate and let them cool. When cold, grind them in a food processor or coffee grinder.
