Besan Ki Roti is the ideal bread for anyone who needs to avoid gluten, as they are made with gram flour, which is produced from ground chickpeas rather than wheat. The dough is kneaded together with grated onion, asafoetida and chillies, then griddle-roasted, which gives a delicious aroma and a nutty taste.

Ingredients

  • 400 g/14 oz/ cups gram flour (besan), sifted, plus extra for dusting

Method

  1. Put the gram flour in a mixing bowl, then add the nigella seeds, asafoetida and salt. Grate the onion, then add to the flour with the chilli and coriander.

  2. Mix well, then gradually add 100ml/3

These were really tasty and a great gluten free option. The grated onion was quite wet so I ended up using quite a bit less water than the recipe calls for. I suppose you could drain the grated onion but I found the onion juice added lots of flavor.
