Besan Ki Roti is the ideal bread for anyone who needs to avoid gluten, as they are made with gram flour, which is produced from ground chickpeas rather than wheat. The dough is kneaded together with grated onion, asafoetida and chillies, then griddle-roasted, which gives a delicious aroma and a nutty taste.

  • 400 g/14 oz/ cups gram flour (besan), sifted, plus extra for dusting
  • 5 ml/1 tsp nigella seeds
  • 2.5 ml/¼ tsp asafoetida
  • 5 ml/1 tsp salt, or to taste
  • 1 medium onion, peeled
  • 1 fresh green chilli, finely chopped (deseeded if preferred)
  • 45 ml/3 tbsp coriander (cilantro) leaves, finely chopped
  • sunflower oil, for cooking

  1. Put the gram flour in a mixing bowl, then add the nigella seeds, asafoetida and salt. Grate the onion, then add to the flour with the chilli and coriander.

  2. Mix well, then gradually add 100ml/3 ½ oz/7 tbsp water until a dough forms.

  3. Transfer the dough to a flat surface and knead it for a couple of minutes with gentle pressure, turning it around frequently. If the dough sticks to your fingers, add a little oil.

  4. Divide the dough into eight equal portions and flatten them into round cakes.

  5. Dust each cake in the flour, then roll them out to circles of about 13cm/5 in diameter with a rolling pin.

  6. Preheat a griddle over a low/medium heat and place a flat bread on it.

  7. Cook the bread for about 1 minute, then spread 15ml/1 tbsp oil around the edges. Continue to cook for 30–40 seconds or until browned.

  8. Turn the bread over and cook the second side until browned. Transfer to a plate lined with kitchen paper and keep warm while you repeat with the remaining breads.
