This recipe was originally intended for small pies baked in pattypans, but it also works well in large pies intended as table centerpieces. With that in mind, I have provided some recipes for pie crusts in chapter 4. You might want to try one of them for this recipe—Susannah Carter’s crust for pattypans is excellent.
