Cranberries were popular for winter pies, and there is a great deal of advice in nineteenth-century household literature on how to keep them from spoiling. One writer suggested: “Cranberries will keep all winter in a firkin of water in a cellar.”10 A firkin in this case is a straight-sided crock.

Another writer commented: “Cranberry pie is better with cake spread in place of a top crust. Any cake we happen t
