The luscious, nectarlike fruitiness and enormous fullness of Sauterne, combined with the flavor of prunes, make this an exceptional dessert. For a spectacular yet understated ending to a meal, serve with Madeleines from Dax.

The flavor improves enormously if this dessert is prepared two to three days in advance. The great French Sauternes is not needed to make this special dessert.
