Rice Milk Veil



  • Rice milk 300 g 10.58 oz 74.48%
  • Sugar 100 g 3.53 oz 24.83%
  • Gellan gum, low acyl 3 g .1 oz .7%


  1. Combine all of the ingredients in a small sauce pot and bring to a boil while gently whisking.
  2. Follow the instructions for the raisin jelly veil.
  3. Cut the veil while on the tray into rectangles measuring 10 cm/4 in wide by 12.5 cm/5 in long, using a ruler and the back of a paring knife.
  4. Reserve refrigerated and covered until use. Discard after 2 days.
