Ingredients

  • 8 mackerel
  • 8 bay leaves
  • 20 black pepper corns
  • 1 tablespoon brown sugar
  • ½ pint mixed cold tea and white vinegar

    Method

    Clean the mackerel and put a bay leaf inside each one. Put the fish side by side in an ovenware dish. Sprinkle on the peppercorns and sugar, and add the mixed tea and vinegar. Cover and bake at 350°F, 180°C, gas mark 4 for one hour. Serve cold.
