Ingredients

  • 1lb barley meal
  • 4oz plain white flour
  • 2 teaspoons cream of tartar
  • ½ teaspoon Salt
  • 12 fl oz butter milk
  • 2 teaspoons bicarbonate of soda

    Method

    Mix together barley meal, flour, cream of tartar and salt. Stir the bicarbonate of soda into the milk and stir quickly. When it fizzes up, pour into the flour mixture. Make into a soft dough and roll out very lightly half-an-inch thick. Cut into rounds the size of a meat plate and put on a hot griddle, hotplate or thick frying pan. Bake gently until the underside is brown. Turn and brown the other side.
