  • 8oz light soft brown sugar
  • 1oz cinnamon
  • Β½oz ginger
  • ΒΌoz cardamon
  • pinch of Cayenne pepper
  • 2 pints red wine


    Stir the sugar and spices into the wine and leave it to stand until it clears completely. Pour off the clear liquid into a bottle. This is a good drink after a rather heavy meal. The spicy dregs can be used to add savour to stews and soups.
