This is my version of an Oreo, the American favourite that you’d serve with a glass of cold milk. It’s a cookies and cream type of biscuit, where the crisp, dark, cocoa-rich biscuit contrasts wonderfully with the smooth vanilla filling. It may be relatively easy to buy this style of biscuit, but these are far tastier.

Method

Preheat the oven to 180°c. In a large bowl, cream the butter and sugar together until fluffy, then add the dairy-free milk and vanilla. Mix well. If it looks like it has split, stir in a tablespoon or two of flour.
