A bit different from the classic garam masala, this shahi (“royal” in Urdu) version is highly aromatic and is used on special occasions to flavor rice, lentils, meats, and vegetables. But you don’t need to wait for a special celebration to use it; I certainly don’t!

You can prepare an intensely floral and aromatic version of shahi garam masala by adding 1 Tbsp of edible dried rose petals to the toasted spice mix when grinding the mixture. I find this version goes well with me
