This is a fresh pickle made with sweet, ripe nectarines; you can use peaches in a pinch.

Because capsaicin is soluble in fat and alcohol and only weakly soluble in water, most of the heat stays concentrated in the chilli to give a pop of heat when you bite into the chilli slices. I find this pickle delicious with soft cheeses such as fresh creamy burrata or with salads or grilled meats and seafood.
