This dish is elegant in its simplicity and a showcase of good ingredients. It’s something I often turn to when families with small children come for lunch -they invariably like the tender chicken and rice, whilst adults can add zing and fire to their plates with the sauces.
Appearing in different versions in Vietnam, Hong Kong, Malaysia and Thailand, it maps centuries of Chinese immigration from the island of Hainan. In Singapore, chicken rice is considered a national dish.
