A rich but delicate flavor comes through in this artichoke soup. The chicken broth is infused with the flavor of the artichokes as it simmers. Although removing pulp from leaves may take a while, it’s worth the effort.

  1. Wash the artichokes thoroughly.
  2. Place the artichokes in a large pot. Add the onion, stock, and water, and bring to a boil. Reduce the heat, cover, and simmer until the artichokes are tender, about 45 minutes.
  3. When the artichokes are done, remove them from the pot, reserving the liquid and onions. Let the artichokes cool.
  4. Peel the leaves away
