This rich meat sauce is heartily flavored by the pork and spareribs. They are what gives it the guts. Serve it over an equally hearty pasta, such as rigatoni.

Ingredients

  • 4 tablespoons olive oil
  • 6 sweet Italian sausages, cut in half
  • 4 hot Italian sausages, cut in ha

Method

  1. Heat 2 tablespoons of the oil in a large skillet. Brown the sausages and spareribs in small batches, about 10 minutes each batch. Transfer them to a large heavy casserole, and set aside.
