Whip up this stir-fry as soon as fresh asparagus comes into the market. It’s very quick to prepare and makes a beautiful appetizer or side vegetable.

Ingredients

2 pounds asparagus, trimmed
2 tablespoons sesame oil
1 ta

Method

Cut off the top 2 inches of the asparagus. Reserve the stems for another use.
Heat the sesame oil in a wok or a large skillet until quite hot. Add the asparagus tips and cook, over medium heat, tossing frequently, for 3 minutes.
Add the soy sauce, sesame seeds, and cashews. Cook over medium-high heat another 2 minutes. Garnish with the scallion, and s
