Wehani rice is a basmati-type hybrid grown in California. When cooked it turns a deep russet color. The flavor is earthy and complex.

Ingredients

  • 1 cup Wehani or basmati rice
  • 6 radishes, halved and sliced ¼ inch thick

Method

  1. Cook the rice according to package directions or the chart you should have about 3 cups. Allow it to cool to room temperature.
  2. Combine the rice, radishes, bell pepper, red onion, beets, chives, and dill in a large bowl. Toss well.
