This easily prepared duck is a showstopper when served with noodles that have been tossed with a light coating of our Sesame Dip.

Ingredients

  • 1 duckling (5 pounds), excess fat removed, well rinsed, and patted dry
  • 2 lemons, halved
  • Salt

Method

  1. Preheat the oven to 400°F.
  2. Rub the duck inside and out with the juice of 1 lemon. Pat dry. Prick the skin all over with the tines of a fork. Sprinkle the outside and the cavity with salt and pepper. Place the second lemon in the cavity.
