Place a few of your favorite berries into the little waffle squares to make a decorative pattern. Serve this with a puréed fruit sauce on the side.

  1. Preheat a waffle iron and grease it lightly.
  2. In a large mixing bowl, toss together the flours, brown sugar, baking soda, cinnamon, and salt.
  3. In another bowl stir together the buttermilk, egg yolks, and butter.
  4. Beat the egg whites in a mixer until stiff.
