The secret ingredient for grilled corn is spicy Albuquerque Butter. Slather the ears of corn with the butter, wrap them back up, and grill. The smoky flavor will come through.

  1. Prepare hot coals for grilling.
  2. Soak the unhusked corn in a large bowl of cold water for 15 minutes. Then peel the husks halfway down, and remove and discard the silk.
  3. Rub the exposed kernels with ¼ cup of the butter. Then replace the husks, and wrap each ear
