These are surprisingly good. The presence of potato in baking seems to have a lightening effect, contrary to what one might suppose.
Rub the fat into the flour, mix with the other ingredients and finally the beaten egg. Drop dessertspoonfuls onto a greased baking tin. Bake in a hot oven (gas mark 7/425°F/220°C) for 15–20 minute.
