Potato Rock Cakes

These are surprisingly good. The presence of potato in baking seems to have a lightening effect, contrary to what one might suppose.

  • 2 oz (50 g) mashed potatoes
  • 2 oz (50 g) margarine
  • 2 oz (50 g) flour
  • 2 oz (50 g) sultanas
  • 2 oz (50 g) sugar
  • 1 teaspoon baking powder
  • A little candied peel
  • 1 egg, beaten

Rub the fat into the flour, mix with the other ingredients and finally the beaten egg. Drop dessertspoonfuls onto a greased baking tin. Bake in a hot oven (gas mark 7/425°F/220°C) for 15–20 minute.

‘Potato roots are now so common amongst us that even the husbandman buys them to please his wife. They nourish mightily … engendering much flesh, blood and seed but withal increasing wind and lust.’

From Health Improvement by Thomas Moffett, c. 1595.
