These elegant little offerings are ideal for entertaining. Chives are among the first herbs to appear in the year.

Ingredients

  • 2 large potatoes, finely sliced
  • 3 oz (75 g) Emmenthal cheese, grated

Method

Grease and line with greaseproof paper the base of four patty tins. Cut the potato slices into circles with a small fluted cutter. Layer the potatoes with the cheese, chives and onion, finishing with a layer of cheese.

Spoon a tablespoon of cream into each tin and bake at gas mark 4/350°F/180°C for 25–30 minutes
