Potatoes with Egg Butter

A Finnish friend gave us this recipe. It needs no accompaniment at all.

Ingredients

  • 2 lb (900 g) new potatoes
  • 8 oz (225 g) butter
  • 2 hard boiled eggs, chopped

Method

Steam the cleaned potatoes, and while doing this soften the butter so that it has a cream-like consistency.

Add the eggs and serve with the potatoes.

A company in Idaho called Saturn Labs has marketed a line in ‘liquid powders’ made from potato starch. The powders, one for the feet and one for the body, go on like lotions with no ‘irritating cloud dust’ according to the write-up in Runner’s World magazine.
