Potato Salad with Mint and Orange

Spearmint, applemint and peppermint – these are the three kinds of mint commonly cultivated and they all share the same aromatic taste of menthol. I prefer the sweet and mellow taste of applemint.

  • lb (700 g) small new potatoes, cleaned and steamed
  • 2 teaspoons grated orange rind
  • 6 tablespoons extra-virgin olive oil
  • tablespoons white wine vinegar
  • 2 tablespoons fresh orange juice
  • 2 tablespoons chopped mint
  • Sea salt and freshly ground black pepper

Combine all the other ingredients and add them to the potatoes while still warm. Cool and bring to the table.

On sale in the United States are ‘Gourmet Greeting Cards’ which feature pictures of cream and cheese-topped baked potatoes. Each card contains six potato recipes.
