Romantics could cook these in the embers of a bonfire. A more reliable method is in the oven.


  • 4 large potatoes, cleaned, unpeeled, sliced ¼ inch thick
  • Sea salt and freshly ground black pepper


Lay out four large squares of aluminium foil and divide the slices of potato on these. Season. Crumble the bacon over the potatoes and then divide the onion, cheese and chillies between the four parcels. Dot with little pats of butter.

Bring up the edges of the foil and seal tightly. Bake at gas mark 4/350°F/180°C for
