Sailing south from Japan and Korea, we come to where the coconuts grow, and rice and rice cakes are cooked in coconut milk. Although this is often part of the making of sweet cakes, rice cooked in this way is an excellent accompaniment to savoury and main-course dishes. (See also the recipe for Coconut Rice.) People in these parts – Laos, Thailand, Malaysia, Indonesia – don’t make rice cakes by crushing the cooked grains, however; they use rice flour.
