This is another sushi which will appeal to everyone. Think of it as a salmon and cucumber sandwich, but round instead of flat, with rice instead of bread, and with the salmon on the outside.

To roll the sushi, you need a Japanese bamboo mat (see the illustration below). Alternatively, you can use a Swiss roll tin.
