  • 1 peck green tomatoes
  • 1 tablespoon salt
  • 4 lbs.


Wash, pick over and chop the tomatoes in small pieces. Place in colander, pour boiling water over them three times, draining well each time. Remove to preserving kettle, add sugar, raisins and currants, well washed and boil slowly until tender. Add vinegar, let cool then add the rest. Use as a filling for pie.
