Ripe Provençal apricots are in the market when English lavender is still in bloom. You can also make this jam in winter using dried apricots and dried lavender.

Method

Have your clean jars heating in the oven while you prepare the fruit. Peel and core the apple, then dice it very finely. Halve the apricots, discarding the stones, and chop the fruit very small. There is no need to remove the skin unless it is loose. Put the apple in a saucepan with 150–200 ml/
