This is a lovely dish for a summer lunch, a feast for carnivorous friends.

Ingredients

  • a whole uncooked ham on the bone, 4–5 kg/8–10 lb
  • 8–10 lavender

Method

Mix the glaze ingredients first. The quantities given here are guidelines only, to give an idea of the proportions. Rub some of the glaze on the ham before cooking it.

Wrap the ham in a triple thickness of buttered foil, on a bed of quartered onions and with a few lavender stalks tucked around it. Place in a roasting tin and bake for 4 hours in an oven pre-heated to
