This is another recipe based on my cooking in the West Country, where I was able to buy excellent kid. There was a lavender bush growing at the farmhouse door, so the two seemed made for each other. Kid is a really excellent meat – lean, tender and full of flavour.

Ingredients

  • a leg of goat weighing about 1.5 kg/3 lb
  • 4 tablespoons

Method

Brown the joint all over in 1 to 2 tablespoons of the olive oil. Peel the garlic, cut it into thin slivers and insert them under the thin layer of fat and skin.

Pre-heat the oven to 180°C/350°F/gas mark 4. P
