Here I pair tomato with lavender as a change from basil or mint, its more usual partners. It makes an exquisite vegetarian first course for a summer meal. The base is bread dough rather than short pastry.

Ingredients

  • 300 g/10 oz strong plain flour
  • 1 teaspoon fast action yeast

Method

Sift the dry ingredients together and then stir in the water. You may not require all the water, or you may need a little more, to produce a soft – but not sticky – dough. Knead for 10 minutes on a floured work-top until you have a smooth, elastic dough. Put the dough in an oiled bowl, cover with a damp cloth and leave it to rise.
